This only makes four servings so for many of my friends this will have to be quadrupled - at least. :)
Ingredients:
2# chicken breasts, cut into bite-sized pieces
1 C flour
1 t ginger
1/4 t pepper
2 t garlic salt
1 t onion powder
1/2 t seasoning salt
1/2 C oil
3/4 C sugar
2 1/2 T cornstarch
2 1/2 t white vinegar
1 C water
2 T soy sauce
3 T ketchup
Directions:
In container with a lid, mix flour, ginger, pepper, garlic salt, onion powder, and seasoning salt. Shake to mix. Add chicken pieces, put lid on and shake to coat.
Heat oil over medium heat. Drop in floured chicken and fry until done. Drain on paper towels.
In large saucepan, whisk sugar, cornstarch, vinegar, water, soy sauce, and ketchup. Heat until mixture boils, stirring constantly. Add chicken pieces once mixture is thickened and toss to coat.
Serve over rice.
